Air Fryer Potato Egg Nests
These Air Fryer Potato Egg Nests are one of my favourite ways to turn simple breakfast ingredients into something a little more special. Crispy shredded potato, melted cheese and egg all cooked together in individual ramekins. Perfect for a relaxed weekend breakfast or brunch, and much easier to make than they look.

Ingredients
- Potatoes, peeled and grated
- Shredded cheese
- Eggs
- A little oil or cooking spray
- Salt
- Black pepper
- Paprika
- Chilli flakes
- Fresh chives or parsley, to finish
Method
- 01
Peel and grate the potatoes, then squeeze out as much excess moisture as possible using a clean kitchen towel.

Lightly grease individual ramekins with oil or cooking spray.

Press the grated potato firmly around the bottom and sides of each ramekin to create a nest or shell. Season lightly with salt, black pepper and paprika.

Place the ramekins in the air fryer and cook the potato shells FIRST at 180°C until they begin to turn golden and crisp around the edges.

Once the potato shells have started to crisp, remove the ramekins from the air fryer and add a layer of shredded cheese inside each nest.

Carefully crack an egg over the cheese in each ramekin.

Return the ramekins to the air fryer and continue cooking until the egg whites are set and the yolks are cooked to your preferred consistency.

Total cooking time should be approximately 16 to 18 minutes, depending on the air fryer and preferred egg consistency.

Finish with freshly ground black pepper, chilli flakes and chopped fresh chives or parsley.
The potato shells must be cooked in the air fryer before the cheese and eggs are added. Air fryers vary, so keep an eye on the eggs during the final few minutes, especially if you prefer softer yolks.

Lackie's Notes
Get those potatoes dry. The more moisture you squeeze from the grated potato, the better chance you have of getting those lovely crispy edges.
And don't forget the cheese goes in before the egg. That little melted layer between the crispy potato and egg is what makes these so good.
Air fryers vary, so keep an eye on the eggs during the final few minutes, especially if you prefer softer yolks.

Serving Suggestion
Serve straight from the ramekins while hot. Pair with fresh fruit, avocado or a simple fresh salad for a relaxed breakfast or brunch.
